8:30 am – 9 am Registration
9 am – Noon Workshops at the Fairgrounds
9 am – Noon Cooking Classes at the High School
Noon – 1 pm Lunch at the Fairgrounds
1 pm – 5 pm Workshops continue at the Fairgrounds
1 pm – 5 pm South American Lamb Roast Class at the Fairgrounds
5 pm – 6:30 pm Informal Demonstrations
6:30 pm Dinner featuring South American Lamb Roast and Rolled Leg of Lamb at the Fairgrounds
Sunday:
8 am – 9 am Breakfast at the Fairgrounds
9 am – Noon Workshops at the Fairgrounds
10 am – Noon Cooking Classes at the High School
Noon – 1 pm Lunch at the Fairgrounds

Outstanding presenters from around the Northwest will be sharing their knowledge on many aspects of the sheep industry. This year we are offering three specific tracks to choose from to make your learning experience more individualized, as well as, “Cooking with Lamb” classes.

Track #1 – Commercial Sheep Production
Health Practices, Shearing, Genetics, Pasture Management and Marketing

Track #2 – Fiber Arts
Wool 101, Felting, Spinning, Weaving and “Make it with Wool”

Track #3 – Show Lamb Projects
Selection, Nutrition, Management, Showmanship, Quality Assurance and Judging

“Cooking with Lamb” Classes
#1 – Stuffed Leg of Lamb and Lamb Chili – Looking for an elegant dinner presentation? During this class you will learn how to create culinary delights that are as beautiful as tasty.
#2 – South American Lamb Roast – Experience old world cooking from biblical times. Presenter Rolando Barrientos from Fernandez Ranch will teach the techniques of a traditional South American whole lamb roast.
#3 – Braised Lamb Shanks – Find lamb hard to cook? This class will teach you how to yield tasty, tender lamb every time.

Klickitat County

Klickitat is a rural county that stretches over 100 miles along the Columbia River. It is located in the south central part of Washington. The population is approximately 19,000. Our county is named after the Klickitat Indian band of the Yakama Indian Nation.
